Popsicles

In light of this heat wave we are in the middle of, I thought I'd inform you all of the BEST popsicles I have made thus far:

1. Take a can of fruit cocktail in juice.
2. Puree the heck out of it.
3. Pour in popsicle molds.
4. Stick the stick things in.
5. Freeze.

They are soooo good. I can't get Ashlin to eat canned fruit, ever! Now she's asking for seconds. And because it's whole fruit, they are getting the fibre and everything (and do my kids need fibre. Oy veh). No refined sugar. It's beautiful.

Anyway, I wanted to know about the texture of these. Are they hard as rock like the all-juice ones? Or more like the gelatin ones? Plus: what size can of fruit cocktail?

They aren't as hard as the juice ones. I like the texture. I used 2 small cans last time - just peaches - and got 15 popsicles of 1/4 cup size.
